Ro’s Walnut Meringue Pie (Submitted by Ro Alfieri)
1c sugar
3 egg whites
1 tsp. baking powder
1 tsp. vanilla
1c chopped walnuts
25 Ritz crackers
½ pint of heavy cream for topping
1. Beat egg whites until stiff. Add the vanilla to the mixture when meringue begins to peak.
2. In a separate bowl, combine crumbled Ritz crackers. Add nuts, baking powder and mix well by hand.
3. Fold in egg whites and slowly add the sugar. Place mixture in a 9” greased glass pie plate.
4. Bake at 325 for 30 minutes.
Top with whipped cream. Note: Add 2 tablespoons of sugar and 1 teaspoon of vanilla when heavy cream begins to whip.
