Nancy's Hunter Chicken (Submitted by Nancy Dyak)

This is a weight watchers recipe Nancy changed to suit her family.  Her family & friends enjoy this as much as she does!

2 1/2 - 3 Pounds of chicken
1/2 tps salt
1/4 tps pepper
3 tsp olive oil
1 onion, sliced
3 garlic cloves, pressed
Assorted vegetables, cut into 1/2 inch pieces equaling 3 cups.  I use peppers, zucchini, squash, celery, beans or peas.  But, you can use whatever vegetables you like, including mushrooms.
1 can tomatoes
1 can tomato sauce
1 can tomato paste

Season with oregano & basil to taste

Put oil, seasoning, sauce, tomato & paste in crock pot, mix.  Add chicken, vegetabes, onion & garlic.  Stir to coat all pieces.
Cook on high for 6 hours or low for 10 hours (if you're working, dinner is done when you get home).

Serve over whole wheat pasta or brown rice, and you have a delicious anf healthy dinner!
