Sweet Potato Souffle (submitted by Renee Chirico)

6 Large sweet potatoes
1/2 stick butter
1 small heavy cream
2 eggs
1/2 cup sugar
cinnamon

Boil sweet potatoes.  Peel skin when potatoes are done.  Put potatoes in a mixing bowl.  Add butter, heavy cream, eggs and sugar.  Mix well.  Put into a casserole dish, sprinkle with cinnamon and dot with butter.  Bake at 400 degrees for 30 minutes.
